I am beginning to notice a trend, in the few books I have read where there is a woman In Charge, On Top – where that’s the whole concept of the novel – where she decides like 3/4 of the way through the story that she wants to be on bottom, or he decides he wants her to submit and she goes along. And all of a sudden she’s all submissive and … I signed on to read an Fdomme story.
Is this common, or just the stuff I’ve read?

It’s pretty common. Fdomme is pretty rare in mainstream romance, I think. Usually it’s ‘and then she realized her deeply buried submissive nature but was still Sassy and Strong.’

Well Melanie and Rolas from my own CotRV have a definite F/m relationship which carries over through the following books in the series, though moderated slightly when her in-laws call her out on some of her past actions.[1] Meanwhile Rola’s sister Sallivera and her bodyguard Alinadar have a nice F/f relationship develop in Shadow of the Red Vixen and Shadow of Her Sins, which you might enjoy. Can’t say, though Lois McMaster-Bujold can be guilty of it, in the later books of her Sharing Knife series.
Most romance is mf and with a submissive female. Fem Dom is very rare, might be found at romanica publishers like Ellora’s cave going for the more kinky audience (yes, most people in romance think femdom is a kink, sadly) and any ff material is with speciality market publishers. Sadly. But yes, opportunity!
